Our 2016 Pinot Noir has been released and is ready to go. In order to balance acidity with fullness/Pinot character, we picked twice; first early in the season when the fruit had a higher acid and then later with a higher baume and more complexity. The two ferments were both left on skins for about 10 days before pressing and eventually blended. We bottled just under 100 dozen of the Pinot.
The 2016 Merlot has just been released too, along with the 2016 Cabernet Sauvignon/Merlot Blend, both ready to go. These Bordeaux varieties reflect the variety of soil types across the vineyard, in their minerality and fantastic spice. Both wines are well structured, complex and elegant with the Cabernet offering savoury notes and great tannins, complemented by the roundness of the Merlot.
